After a lifelong battle with irritable bowel syndrome (IBS) and ankylosing spondylitis (AS) for most of her life, New Zealander-turned-British citizen Carol Sinclair began consuming a low-starch diet about two decades ago as a means for bringing her painful diseases under control. It was through the discovery of the rare AS condition that she was able to see that it was the starchy carbohydrates she was consuming that were the culprit in her excruciating day-to-day living. She began creating a diet plan that would help her minimize the impact of starch on her body, including over 200 recipes that she stored up over the years. Carol was encouraged to share what she had learned about a “low-starch diet” in a book, so she released The IBS Low-Starch Diet detailing her plan for dealing with any number of chronic quality of life conditions that people are suffering from.
