539: Low-Carb Diabetes Blogger Steve Cooksey And ‘Primal Tightwad’ E-Book Author Carolyn Rush

We like to stay on top of what’s happening in the low-carb community and bring to you breaking news when it happens. And today we begin the podcast with a shocking turn of events that took place on Friday, January 27, 2011 when a group of dietitians began investigating Steve Cooksey’s low-carb diabetes blog called Diabetes Warrior because they claim he is giving nutritional counseling services to his readers without a license. As a formerly obese man who was taking insulin and medications to help control his diabetes, Steve no longer has to do that since finding healthy high-fat, low-carb living. This apparently has not sat well with these RDs in North Carolina who would like nothing more than to silence his First Amendment rights to free speech. This could be a HUGE opportunity to spread the low-carb message if this story gets some major media attention and we’ll be following it closely as it unfolds. Hey, Jimmy; thanks for pointing me toward this podcast! And thanks to you and Carolyn both for helping to spread some great information. People really can afford to eat healthy foods.
I will say that there’s one more thing for which that trendy health food store is good: flax seeds. See if you can follow this “logic”: Flax meal at that store costs more per pound than at any other store in town, at least here in my area. But whole flax seeds cost less per pound at that trendy store than any of the flax meal anywhere else! (And the flax seeds will keep better, too.)
So, you bet I go pretend to be “trendy” whenever I need more flax meal. My blender does a great job of grinding flax seeds!

One of the things that make me crazy is when someone says they can’t afford to low carb (whether paleo or not) is they pay $5 for a box of 100 calorie snacks or $10 for a fast food meal.
Exactly! It’s all about perspective and priorities.
As a note, the guy in the meat department at my local Whole Foods marks the grass fed ground beef down to half price after 8:30. But you have to ask him for it! You can get deals anywhere!
Cool tip!
I asked my butcher to save some chicken skins and fat. I simmered them then strained the liquid into a jug. When the stock was cool I put it into the fridge. Next morning I had delicious stock for soup with fat on top to use for frying. The cost? FREE!
