Three cheeers for cheese, but it’s not just the French. My wife and I recently returned from a cycling trip in Umbria and Toscana (Italy) and wilst there fell in love with pecarino (sheep’s cheese), as well as the countryside. Breakfast always included at least three kinds of cheese, an assortment of ham, salami and bacon, often eggs and some very nice traditionally baked bread. I suspect the wheat (which they grow a lot of) is hybidised for flavour and digestability rather than height and yield. And there was NEVER margerine, only butter at the table. Nice. However, the hotels catered for tourists with a sweet tooth as well.
The Italians come 25th on the list that ranks Americans 1st in obesity. Might be more than just simple carbs, eh?
