He founded a company called the Tallgrass Beef Company to educate about why grass-fed is far superior to grain-fed beef, including lower amounts of LDL fats, the rich presence of omega-3 essential fatty acids, the lack of E. coli bacteria in the gut (and on the meat of) cattle, reduction in antibiotic exposure and more. In December 2007, Bill released a book entitled The Prairie Table Cookbook to tell the history behind the Tallgrass Beef Company and how the original settlers of the land there went about producing high-quality, grass-fed beef. For you television and history buffs, you’ll be interested in knowing that the “Little House On The Prairie” is located on this land owned by Bill Kurtis. It’s a property steep in history that is still making an impact today.
